Chocolate & Cherry Shortbread
Buttery shortbread biscuits full of cherries and chocolate.
Preheat the oven to 190⁰C, gas mark 5. Grease 2 baking sheets.
Sieve the flour into a bowl and rub in the butter until it resembles breadcrumbs, add the sugar, cherries and chocolate and combine with the hands to form a dough.
Roll out on a lightly floured surface to a depth of 1cm and use a 6cm round cutter to stamp out the biscuits. Place onto the baking sheets and bake for 15-20 minutes until golden brown. Cool on a wire rack.
Try using themed cutters for special occasions.
175 g plain flour
100 g softened, unsalted butter
50 g caster sugar
50 g glace cherries chopped
50 g Cadbury Dairy Milk chopped into small chunks
