Chocolate Summer Fruit Pudding

A delicious partnership of summer fruits and chocolate sponge.
Grease an ovenproof dish of about 1 litre capacity and heat the oven to 180˚C, gas mark 4. Arrange the fruit in the base of the dish and sprinkle over 20g of the sugar.
Cream the butter and remaining sugar together until pale and fluffy. Add the eggs one at a time and beat well.
Gently stir in the flour and cocoa powder together with a little milk to give a dropping consistency. Stir in the chocolate pieces.
Spoon the sponge mixture over the summer fruits, levelling the surface. Bake for about 40 minutes until risen and firm to touch, or until a skewer inserted into the centre of the pudding comes out clean. Leave to cool for a few minutes before serving
In the autumn, instead of the summer fruits use blackberries and apple slices.
300 g Fresh summer fruit , E.g. raspberries, strawberries, blueberries, blackcurrants
95 g caster sugar
75 g butter , softened
2 medium eggs
140 g self raising flour
20 g Cadbury Bournville Cocoa
4 tbsp Semi-skinned milk
50 g Cadbury Dairy Milk , roughly chopped
